Goff Standby (Aka Spanish Rice Casserole)

My sister-in-law dubbed this "Goff Standby" because it was made of what was on hand, when she could not figure what else to fix for dinner.  She was also introduced to this dish by my mother-in-law.  Later we all discovered that the recipe originated with Great Grandmother Tuttle, but nevertheless the name stuck!

Rice:
1         Cup Long Grain White Rice, Uncooked
2         Cups Water
1         Teaspoon Salt
1         Tablespoon Butter
Casserole:
1         Pound Ground Beef
1         Medium Onion, Diced
1         Pound Can Stewed Tomatoes
1      8 Ounce Can Tomato Sauce
2         Pinches of Basil
 Salt, Pepper, and Garlic Powder to Taste.

1 Cup Grated Cheddar

Bring water, salt, and butter to a boil, stir in rice, return to a boil, place on lid, reduce heat to medium-low and simmer 20 minutes.
While rice is cooking, brown the beef, onion, add seasonings, and drain of fat. Add tomatoes and tomato sauce and heat thoroughly. Put half the rice on the bottom of a greased casserole dish. Cover with half of the meat mixture.  Sprinkle 1/2 cup of cheese evenly over the meat mixture.  Repeat with rice, meat mixture, and top with cheese. Cover with a lid or foil. Bake at 350 for 30 minutes.

Teri Beef King

I grew up on Oahu. I can remember going to Kenny's Burger House in the Kam Shopping Center in Kalihi. Kenny's was there for almost a decade before McDonalds got to Hawaii, and in 2002 was replaced with a McDonalds. One dish Kenny's served was a Teri Beef King sandwich. This is my rendition. I know some people had other things on theirs, but I was a kid and a purist. I had the meat, onion, and bun.

Ingredients:
Thin sliced raw beef roast, marinated in my Teriyaki sauce marinade over night.
(I have the butcher shave or thin slice a roast)
Fresh thin sliced yellow onion
Hamburger Buns
Butter

Directions:
Cook marinated meat and onions together, in a skillet. This caramelizes the onions. in teriyaki sauce. Butter bun face and place face down in a hot skillet to toast and crisp the bun surface. Assemble and enjoy. Serve hot.

Chili Burritos

This is a quick meal, I used to call it Relief Society Night Supper. It can be made with canned chili, or with leftover Donna's Chili. Reheats well.

Ingredients:
Leftover homemade chili or 1 can chunky chili and 1 can hot chili
Flour tortillas
Grated cheddar cheese
Shredded lettuce

Directions:

Preheat oven to 360 degrees. Heat chili in a sauce pan on the stove. Scoop with a large serving spoon about 1/4 cup chili onto a tortilla, sprinkle with cheese, roll, and place in a 9 x 13 baking dish. Continue until all chili is used. Top with cheese and bake 15 minutes. Serve with grated cheddar cheese.

Leftovers can be stored in the fridge in a ziploc bag and can be eaten either cold or reheated. these can also be frozen.

Donna's Chili

Ingredients:

2 lbs ground beef
1/2 onion, diced

! lb can chili with beans and gravy
1 lb can stewed tomatoes
1 8oz. can tomato sauce

Grated Cheddar Cheese

Salt and pepper to taste.

Directions:

Brown beef and onion together. Drain. Add Beans, Tomatoes and tomato sauce. Simmer 30 minutes. Salt and paper to taste. Serve with grated cheese.

Donna’s Winter Sunday Roast

Ingredients:
One 3 lb or larger frozen roast, either beef or pork
1/2 cup soy sauce
Directions:
Place frozen roast baking dish, pour soy sauce over roast, and cover tightly with a lid. Bake at 275 degrees for 6 hours. Shred roast and serve with rice or mashed potaoes.
Note: Rule of thumb- 1/4 lb per person
